<p style="font-size:18px">I am extremely happy now that I know where to buy them fresh in UK and the shop is not too far away from my home. I am even more happier with the fact that my very British husband says he loves them. He actually showed me his cleaned plate earlier, hmm&#8230;.. like a dog has licked it! </p>



<p style="font-size:18px">My mind is now racing with different methods of cooking, recipes on using it and so on since the hubby don&#8217;t mind eating it. Moringa has a bit of an acquired taste. To me it tasted a lot like New Zealand&#8217;s spinach. The normal European spinach don&#8217;t have much of a strong taste. (my opinion) Then you have the Asian spinach which is stronger in taste. Next to me is this moringa leaves and followed by New Zealand spinach that I don&#8217;t quite fancy. I grew them for a few summers and we eat till scared. A bit on the rough side, not smooth like European spinach. </p>



<p style="font-size:18px">As with all my dishes I would say, make it your own. You could add  more chillies, pinch of sugar etc but I am very careful with carbohydrates/sugar and hidden sugars because I am a diabetic and have been for 25 years and I truly believe that it is due to self control that I am not yet on insulin. However I do not believe in eating &#8216;diabetic&#8217; food. I eat EVERYTHING I like in moderation. I want to leave this world not only having lived my life but ENJOYED it. </p>

<p style="font-size:16px">Today is Thursday, the day hubby has to pop into his office. I like to cook him a surprise lunch every Thursday. I sent him to work this morning after giving him eggy bread and started to make my asam curry paste. I planned to finished cooking and showered by the time he comes back for lunch.</p>



<p style="font-size:16px">There are many ways of cooking this dish but this is the way I preferred mine to be cooked as this is the way I have eaten for as long as I could remember. I suppose like most dishes traditionally we are used to how our parents and grandparents cooked them. </p>



<p style="font-size:16px">As for me myself I still much preferred my fish to be seasoned and fried before adding to my asam curry sauce. Hence, I find it hard to eat fish curry outside and I always asked the vendor if they fried their fish first before placing my order. </p>



<p style="font-size:16px">As usual this is more as a guide than a fixed recipe as such. I have a pot of otak udang chilli that I have made the other day which I can add to my paste. If you do not have you can add a small handful of dried shrimps and blend with your paste. I also have daun kesom, laksa leaves, bravely surviving in the cold so I used some to boil my nasi kunyit. </p>



<p style="font-size:16px">As I am using oil to fry and aubergines and fish, I decided to also fry some keropok ikan and prawns from Kuching and some chicken and prawn wantons. This is because after frying my aubergines and fish I will throw away the oil. The oil will then have no more &#8216;strength&#8217; for frying anything else. To try and reuse it some more will cause your cook to be very greasy! </p>



<p style="font-size:16px">p/s Otak udang &#8211; fried prawns heads with oil till crispy with garlic, salt, chilli and blitz in the blender to make a paste. Store in fridge and use at will. </p>

<p>Salted Egg Yolks Butter Pork Ribs – 牛油黃金排骨 with curry leaves &amp; fresh chillies. Salted egg yolks and evaporated milk is very rich, and paired with curry leaves, the smell is so good. This is quite an easy dish to cook.</p>



<p>I wanted to soak a new batch of salted eggs so I went all out and used all of my leftover 8 yolks. This is also because the hubby, funny Mat Salleh that he is, is not very good with chewing ribs but he loves salted eggs yolks so I am making extra bits for him to go with his rice. You don’t have to use as many salted egg yolks.&nbsp;</p>



<p>This dish also justify the fresh curry leaves my friend gave me to the maximum.</p>

Set aside for half an hour at least.</div></li><li id="wprm-recipe-252-step-0-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Heat the oil for frying and add in the cornflour to your ribs. Give it all a good stir before dropping them into the hot oil and fry them till crispy. Depending on the size of your wok/pan you might need to fry the ribs in a few batches. Fry till golden brown.</div></li><li id="wprm-recipe-252-step-0-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">After frying your ribs, set them aside to drain on kitchen towels. Meanwhile, pour the oil away and wipe your wok clean.</div></li><li id="wprm-recipe-252-step-0-3" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Drop the butter onto your wok and your frying ingredients, garlic, shallots, curry leaves and the steamed salted egg yolks. Mash the egg yolks into the butter. Give it a good few minutes of stirring on medium heat and they will become all frothy.</div></li><li id="wprm-recipe-252-step-0-4" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">When it&#8217;s frothy add in the evaporated milk and let it bubble &#8211; stirring constantly.</div></li><li id="wprm-recipe-252-step-0-5" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">lastly add in your red chillies, then your prepared ribs. After this, give it a good stir and serve.</div></li></ul></div></div>

I used 9 that I had left. This is because my husband loves salted egg yolks but he is not very good with ribs. Hence I want to make more yummy bits for him. You can also adjust the spiciness with the additional of more or less chillies. Please don&#8217;t save on the curry leaves. They make the dish. The fragrant smell of curry leaves just stir up my taste buds. If you are watching your carbohydrates this is a good snack food. I had them with a whole cucumber for my lunch and felt very satisfied. I admit I have some in the late afternoon too. Watching television and sucking the ribs clean. Burrrpppp</span></div></div>

<p>Last Saturday a few of us met up for a get together to celebrate the Malaysian Carnival at<a href="https://web.archive.org/web/20171226164957/https://www.brickendonbury.co.uk/view-blog/merdeka-malaysian-carnival-23rd-september-2017-9/">&nbsp;https://www.brickendonbury.co.uk/view-blog/merdeka-malaysian-carnival-23rd-september-2017-9/</a>&nbsp;It was a fun chin wag alongside&nbsp;plenty of food.</p>



<p>A friend gave me a very fresh packet of curry leaves and I’ve been thinking of ways to celebrate them. It is not that easy to get such fresh curry leaves in the UK. As I have some frozen leaves in my freezer already I decided to go to town with these to use them fresh today and tomorrow.&nbsp;</p>



<p>Often we think of something we would like to eat with the flavours we love. I was thinking about crispy pork belly for a few days so I decided to combine them and my fresh curry leaves. Hence this very moreish dish is born.</p>

You can use pork belly with skin on or off but be warned the skin on will spit a LOT but they taste more crispy! This will take sometime.</div></li><li id="wprm-recipe-135-step-0-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">When done remove and set the crispy pork belly aside. Save the oil to use for frying noodles, stir-fry vegetable and fried rice.</div></li></ul></div><div class="wprm-recipe-instruction-group"><h4 class="wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold">Cooking</h4><ul class="wprm-recipe-instructions"><li id="wprm-recipe-135-step-1-0" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">In the same wok where you fried the pork belly with 2 tbsp with the oil left fry the sliced onions, minced garlic, chopped dried and fresh chillies for a few minutes till fragrant. Add in the curry leaves too.</div></li><li id="wprm-recipe-135-step-1-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Next goes in the toasted belacan (shrimp paste) and gula atap. If you do not have gula atap use dark brown sugar, tamarind juice and juice of a lime, plus the pulps.</div></li><li id="wprm-recipe-135-step-1-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Fry for a bit and add in the crispy pork belly. Turn heat off and just gives everything a good toast then serve.</div></li></ul></div></div>
