<p style="font-size:18px">My husband do not like eating fresh tomatoes and as I always challenged myself to make him eat his words, literally so &#8211; hahahaha I am thus am quite happy that he not only licked his lunch plate cleaned but asked if there is any leftover for dinner. I think I have won! </p>



<p style="font-size:18px">I harvested my tomatoes that are red and racked my brains as to how to make him eat by cooking something he likes. I have cod cheeks in my freezer as after coming back from Devon I have stocked up lots of seafood and I also made some onsen style eggs with my Sousvide machine. So this dish is born. </p>

<p style="font-size:18px">I would not be giving an exact measurements of recipe as I used 2 large onions and double the amount of tomatoes. I used a whole bulb of garlic and the ginger was same size as a bulb of garlic and no, I did not weight it! Recipe like this don&#8217;t need a hard and fast rules. It&#8217;s not baking a cake. Just cook, taste and taste and season to your liking.  </p>



<p style="font-size:18px">Sometimes we just have to use what is on hand. For example, I would have preferred to use green chillies for the contrasting colours but I only had red. (I forgot I have green chillies still growing in my little kitchen garden! Alamak! </p>



<p style="font-size:18px">I have also added some king prawns because my daughter loves prawns but the hubby called them scavenger of the sea. The recipe is a guide to making a basic masala onion base. </p>



<p style="font-size:18px">I have saved half for another day because I have aubergines incoming from my garden soon. It is a good TIP to remember when you make paste from scratch, always make a tad more to keep. </p>

<p>I used ghee then blend my onions to fry, adding the ginger, garlic and chilli. Washed and even peeled my tomatoes, as so fresh and firm very easy to peel before blending and adding in.</p>

<p style="font-size:18px">While the tomato masala is cooking down let&#8217;s prepare the cod cheeks. Remove the sinew from the cod cheeks then seasoned and floured. I used salt, turmeric powder and freshly ground black pepper. Lastly dusted with rice flour. Shallow fry in oil for a few minutes then add to your prepared tomato and onions masala paste. </p>

<p style="font-size:18px">I then cracked in 3 onsen styled eggs cooked in my Sousvide. Braved the drizzle outside and harvested some laksa leaves to add in because I have and because I love the taste. </p>

<p>I have been hankering for something Asam quite awhile now. I know today is going to be HOT and it might end up being the hottest day of the year 2024 in UK but I have bought these skate wings on Saturday and they must be eaten by today. I do not want to freeze them. The chap selling did tell me I could freeze them but I prefer them inside my tummy. </p>



<p>So it&#8217;s kinda a, if needs must cook/eat time. I woke up early to water my plants and then started in the kitchen. I wanted to finish cooking before the midday sun. Today I have decided to part with half of my precious frozen torch ginger. No point in saving it for a rainy day. Just eat. <em>kekekekeke</em></p>



<p>I did not have any fresh tomatoes as the ones left in my little kitchen garden are still green So for the different level of sourness, I decided it&#8217;s time to rinse out that bottle of tomato sauce that I have been saving too. I am happy to report that it works! </p>



<p>During the summer in UK when the weather is like now I am usually blessed with an abundance of laksa leaves or Vietnamese mint. I know people freezes them and I do too but when there is a plenty I like to use them fresh. Today I cooked with my own laksa leaves and chillies. Them chillies has a bit of a kick. </p>



<p>I repeat again, my recipe is a guide so please make it your own. I made extras kuah today because hubby said he wants some tomorrow. So tomorrow I will add in a tin of sardines and maybe more red onions and he would be a very happy man. Weird kwai loh that he is! </p>

<p style="font-size:16px">Today is Thursday, the day hubby has to pop into his office. I like to cook him a surprise lunch every Thursday. I sent him to work this morning after giving him eggy bread and started to make my asam curry paste. I planned to finished cooking and showered by the time he comes back for lunch.</p>



<p style="font-size:16px">There are many ways of cooking this dish but this is the way I preferred mine to be cooked as this is the way I have eaten for as long as I could remember. I suppose like most dishes traditionally we are used to how our parents and grandparents cooked them. </p>



<p style="font-size:16px">As for me myself I still much preferred my fish to be seasoned and fried before adding to my asam curry sauce. Hence, I find it hard to eat fish curry outside and I always asked the vendor if they fried their fish first before placing my order. </p>



<p style="font-size:16px">As usual this is more as a guide than a fixed recipe as such. I have a pot of otak udang chilli that I have made the other day which I can add to my paste. If you do not have you can add a small handful of dried shrimps and blend with your paste. I also have daun kesom, laksa leaves, bravely surviving in the cold so I used some to boil my nasi kunyit. </p>



<p style="font-size:16px">As I am using oil to fry and aubergines and fish, I decided to also fry some keropok ikan and prawns from Kuching and some chicken and prawn wantons. This is because after frying my aubergines and fish I will throw away the oil. The oil will then have no more &#8216;strength&#8217; for frying anything else. To try and reuse it some more will cause your cook to be very greasy! </p>



<p style="font-size:16px">p/s Otak udang &#8211; fried prawns heads with oil till crispy with garlic, salt, chilli and blitz in the blender to make a paste. Store in fridge and use at will. </p>

<p>Asam Laksa can happen in Hertfordshire, England. </p>



<p>A couple of decades ago I I was missing Asam Laksa so much but it was near impossible to find all the ingredients here. I was &#8216;importing&#8217; my stash every time I <em>balik kampung</em> <img src="https://s.w.org/images/core/emoji/17.0.2/72x72/1f600.png" alt="😀" class="wp-smiley" style="height: 1em; max-height: 1em;" /> </p>



<p>My stash included torch ginger (<em>bunga kantan</em>), polygonum odoratum (<em>daun kesum</em>) and calamansi lime (<em>limau kesturi</em>) but nowadays they are able to be gotten here but still not easy. </p>



<p>Today I have decided to use some of my stash from Malaysia to cook Asam Laksa as I am going to replenish my stash soon. </p>



<p>For my paste I like to add a small bit of turmeric and galangal (blue ginger) Both these ingredients are easy to find here in Chinatown.</p>



<p>TIP 1 &#8211; To get a clear fish broth sieve it once with a normal sieve then sieve it a second time by placing a sheet of kitchen roll on your sieve as an extra lining for a much clearer fish broth.</p>



<p>TIP 2 &#8211; Blend your spices till fine. I like to blend some of my lemon grass and torch ginger besides adding some to boil with the broth.</p>



<p>TIP 3 &#8211; Remove the big bits from your broth before adding in your fish meat. </p>

<p>Actually Asam Laksa is very easy to cook. Years of working and cooking for a family you learn to organise yourself. </p>



<p>I like to boil and picked my fish the night before and the next day just blend and fry the paste. Mush easier and less stress.</p>



<p>Note &#8211; I have tried ordering asam laksa outside and I have yet to find one I am willing to part my ££ for! A famous restaurant in Chinatown which I once took a Japanese friend to try (after singing the virtue of how cool and different asam laksa is) was a HUGE let down. </p>



<p>When I queried, the waitress told me it just tin sardines + chilli + asam jawa water and the people working there don&#8217;t even eat it! Till this day I am still shocked! </p>



<p>When I read some good reviews recently I think I have to go and try again to see if they have &#8216;updated&#8217; their asam laksa OR maybe I am just fussy? &#8211; kekekekekeke </p>



<p>A good asam laksa (my opinion)</p>



<p>1 &#8211; The broth should not be a murky dark brown or look like curry. It should be a clear fish broth with hint of red chilli oil.</p>



<p>2 &#8211; The mackerels if you have picked yourself should be in chunks not in bits.</p>



<p>3 &#8211; The taste should be sour, spicy, taste of lemongrass, galangal and most important of all the combo of torch ginger and laksa leaves! </p>



<p>Note &#8211; Remember the heh ko/prawn paste is sweet. Use as much or as little as you like. </p>

Do not over boil. Remove the fishes and let them cool down.  If you boiled too long your fish will be too soft and hard to pick. (I am not old enough to eat mushy food, yet!)</span></div></li><li id="wprm-recipe-1414-step-0-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Pick out all the meat and place the bones back to boil for about 30 minutes to an hour to make a flavoursome broth.</span></div></li><li id="wprm-recipe-1414-step-0-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Place the fish meat into containers and in the fridge. You can sieve the stock and store in your fridge (if you like to do this part the night before) I like to leave it overnight.</span></div></li></ul></div><div class="wprm-recipe-instruction-group"><h4 class="wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold">Asam Laksa broth</h4><ul class="wprm-recipe-instructions"><li id="wprm-recipe-1414-step-1-0" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Fry your paste with a touch of oil till fragrant. Then add your fish broth in. Continue to simmer for at least 30 minutes on low heat before adding in the fish meat </span></div></li><li id="wprm-recipe-1414-step-1-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">The secret and special addition of a tin of sardine is added at the last minute! Taste and season. I like mine very sour and I add more asam jawa juice.</span></div></li></ul></div><div class="wprm-recipe-instruction-group"><h4 class="wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold">Garnishing</h4><ul class="wprm-recipe-instructions"><li id="wprm-recipe-1414-step-2-0" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">While your stock is simmering on low heat, slice your pineapple, cucumber, red onions and soak your noodles. </span></div></li><li id="wprm-recipe-1414-step-2-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Serve by placing your noodles, broth and the garnishes on top.</span></div></li><li id="wprm-recipe-1414-step-2-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Lastly add in the heh ko/prawn paste.
