Melt the butter over medium heat add in the mince garlic and leeks. Give them a good stir till the leeks soften. Add in the chicken stock and lemon juice. Let everything simmer for about 10 to 15 minutes
Then add in the cream, season with salt and pepper. Finally sprinkle with grated Parmesan cheese.
Notes
Creamy leeks is a good side dish to accompany any protein. I love it especially with fish. You can of course add in a bit of spring onions for the extra 'onion' taste at the end.
