<p style="font-size:18px">Today I have an update. I tried this combo a few times. I found I really like it. Good fish paste is very hard to get in the UK. More often than not, I am most disappointed. Can&#8217;t even get the fish I want most times when I feel like making. So I decided to combine chicken and prawns and I found it very palatable. So this is a new take on Yong Liew I am not posting again my recipe again. Please use the link above as guide. Instead this update will be all pics with guidelines. </p>



<p style="font-size:18px">This paste is 500g chicken meat, 500g prawns, 1 tsp shallots oil, 2 heap tsp cornflour, salt + pepper to season and half cup water.</p>

<p style="font-size:18px">As I am frying the stuffed vegetables, I decided to fry some prawn crackers first. This not only flavoured the oil but less wastage because I will bin the oil after. </p>



<p style="font-size:18px">TIPs 1 &#8211; Put in more oil in the beginning when frying the prawns crackers. Then remove as I go on. </p>



<p style="font-size:18px">TIP 2 &#8211; First fry the inside out stuffed toufo-pop. They need more oil to crisp all round evenly. </p>



<p style="font-size:18px">TIP 3 &#8211; Then comes the stuffed aubergines as they also needs more oil to fry. If you have stuffed the paste well, the stuffing will remain intact. Your pot must be just right for the pieces to sit up close and personal. This ensures the stuffing does not break loose or fall out. </p>



<p style="font-size:18px">TIP 4 &#8211; When frying the toufo, it is a MUST to handle gently and this soft toufo breaks easily. Remove some oil before placing the toufo in stuffing side down. Leave them to fry for a good 2 minutes before flipping gently or you will mess them up, aka breaking. </p>



<p style="font-size:18px">TIP 5 &#8211; Remove even more oil before frying mushrooms and chilies. When you tidy your chilies to stuff, you must consider which side to place them. This way, they can be placed stuffing side down in the oil. You literally only need to fry the paste side. Remember you do not need to fry the vegetables. This means your paste stuffing will NOT fall out of your chilies. </p>



<p style="font-size:18px">TIP 6 &#8211; You can stuff bak choy and anything you wish. Just needs to gently press the paste into the nooks and corners. Again you make sure oil is only like 1cm deep. Just fry the paste side for 2 minutes. Then flip and remove. The residue oil will wilt the leaves. </p>



<p style="font-size:18px">TIP 7 &#8211; You can freeze toufo-pop because they freeze well for months. You can also freeze &#8216;hard/tough&#8217; vegetables like bitter gourds. But soft vegetables like aubergines, bak choy, long beans, do not freeze well. They become horribly soft and mushy when defrosted. Well, you can if you like baby food. </p>



<p style="font-size:18px">Side Note &#8211; After you stuffed your vegetables they are all in room temperature. When hot oil hits them, they cook in minutes. Please do not fry too long. This is especially important for the toufo-pop if you want to freeze them and air fry another day. Today I braised some with ginger and yellow beans because hubby is nursing a bad tooth abscess. Hence all the soft toufo goes to him but he loves the stuffed chilies too. </p>

<p style="font-size:18px">Today I treated my family to a special noodle dish from Sarawak. It&#8217;s been awhile since I made this and although it is called Red Kolok Mee, no colouring was used. Well at least not me. As for the steps of cooking please have a read here &#8211; </p>

<p style="font-size:18px">Nowadays you can make char sui anytime in the air fryer and it&#8217;s quite fast and no frills like I did today. However if you did not marinate your pork overnight feel free to liberally poke it with a sturdy fork before marinating. I did it as soon as I went down to the kitchen this morning. Some days you just do not know what to cook and I just decided this was going to be today&#8217;s dish, right before I fell asleep last night! </p>



<p style="font-size:18px">The char sui was roasted in my air fryer for 30 minutes at 190C, from room temperature. 20 minutes on one side and I flipped over for another 10 minutes. I set my temperature and time according to the thickness of my pork belly. Give it a go as practise makes perfect. I actually wanted to light the BBQ to char them but was too lazy and the family were starving. So I just took the char sui to my garden on a tin plate and torched them a bit to get the char with an industrial blow torch.  </p>

<span style="display: block;">TIP &#8211; Invest in a blow torch and use them to torch your char sui and other meat. It brings out a better taste and looks better. Do not buy the expensive silly cooking blow torch. Get one from the DIY shops. They are the best! </span><div class="wprm-spacer"></div>
<span style="display: block;">TIP &#8211; make your mince with added pork lard for the little &#8216;crackling&#8217; for a much better taste. Add in garlic and shallots.</span></div></div>

<p style="font-size:16px">Nowadays I only blog dishes that I love to eat. My daughter has also taken an interest in cooking simple food recently. Praise the Lord! I think of ideas and simplified them but yet hope to maintain &#8216;tasty&#8217; so she can try and make it her own one day. She loves seafood and prawns above all else. </p>



<p style="font-size:16px">Today&#8217;s dish is very simple. I bought a block of raw shrimps the other day and made some prawns paste. It is very easy to make if you have a blender. I prefer to make my own because I have a suspicious mind. I always think others are not &#8216;clean&#8217; especially those doing it in bulk for business. </p>



<p style="font-size:16px">Please refer to the pics for inspirations. </p>



<p style="font-size:16px">TIP &#8211; You can add in a beaten egg or two just before serving to thicken the sauce instead of using corn-starch. </p>



<p style="font-size:16px">TIP &#8211; You can also make any sauce you like using chicken stock or mushroom stock.</p>

<p style="font-size:16px">Sometimes, actually most times I like to do a one dish. Often, we skipped breakfast, have early lunch and late dinner. Lucky for me hubby is one who do not mind eating the same dish for both meals and if it is Malaysian curry he can eat it for few days &#8211; kekekekeke</p>



<p style="font-size:16px">Today I decided to do a trio of braised soyabean products dish. It is said that soya products are very good for menopausal symptoms, and I am lucky that hubby is a huge fan of anything made from soyabeans. Heck there are soyabean products that he will eat, and I won&#8217;t! Funny man will eat like fermented beancurd especially the spicy ones with plain rice! </p>



<p style="font-size:16px">Soyabean has some of the most important nutrient required in the human body. Besides offering high-quality protein&nbsp;it is super rich in saturated fats, antioxidants, Omega-3 fatty acids, fibre, and phytoestrogens.</p>



<p style="font-size:16px">It has a long list of benefits, but I am only interested in the diabetes aspects, the potential of sleep regulating and the improving of blood circulation for the menopausal women. </p>



<p style="font-size:16px">We do eat a lot of soya produce, at least once or twice a week in one form or another. I do make my own soya milk often and it is pretty easy to just add a few egg yolks and steam for a smooth soft eggy dish. </p>



<p style="font-size:16px">When I make my own soya milk, I would also boil it in the morning and crack a couple of eggs in for breakfast. </p>



<p style="font-size:16px">Anyway, hope you enjoy this simple made-up dish. Please adjust and add anything you wish. I would have added other types of mushrooms if I had. </p>



<p style="font-size:16px">Note: To velvet your chicken just marinate with light soy sauce, cornstarch, salt and pepper. Before hitting the oil add in a sesame oil and loosen. Your chicken slices will be velvety smooth and won&#8217;t clump together. </p>

<p>KamPua Mee, Mee Pok, Kolok Mee, Hakka Mee, Kon Loh Mee, Mi Kolok, by any other names, in any other dialects are all basically dry flavoured noodles. </p>



<p>There is something about dried flavoured noodles that is so comforting to an Asian and especially to one who grew up in Kuching, Sarawak you just find it difficult not to have a deep desire to eat it when you are feeling a bit under the weather.</p>



<p>When I was working this is my weekend work. Making the &#8216;readies&#8217; shallots crisps and oil, garlic oil, ginger crisps and oil, char sui for the freezer etc etc. In my house I always have ready mince even though I am not working now. Hubby will get very excited when he sees me frying this mince pork. </p>



<p>I remembered when we first moved from Kuching to Ipoh, Gunung Rapat area, there was a new Kedai Kopi with a stall serving Kon Loh Mee (Cantonese for dry noodles). The noodles were rather plain and wanting. My mother made friend with the lady seller and told her how in Kuching the Kolok Mee stall we frequent always have nicely flavoured minced pork toppings. That was the start of a great relationships! Mother then started to explain to her how she should have flavoured oil and flavoured minced pork.</p>



<p>The next time we ate there again, there were well fried and flavoured minced pork dotting here and there on the bowls of noodles and business for the lady improved! My mother was happy and I have always remembered this incident. Not sure why.</p>



<p>I can still remember the Kedai Kopi in my mind&#8217;s eye as it was next door to my Uncle&#8217;s the then Sundry Shop. Hmmm&#8230;&#8230;a case of with age comes reminiscences? 😀 Certainly a sign of old age.</p>



<p>These noodles were from my old classmate. I must be not too bad a person to have good friends from school days who still loves me &lt;3 At first I was rather sceptical about these dry noodles. I was thinking, nah they will never taste as good as the real ones &#8230;&#8230;. BUT I stand corrected! These were good! The dried KamPua Mee taste different to other dried noodles! I must get my hands on more! The hubby said they have a special springy bounce and I agrees wholeheartedly. </p>



<p>Sometime the hubby will just ask for kolok mee kosong. That means nothing added just the noodles, oils and mince! In his opinion simple is the best! </p>



<p>Updated 23rd September 2020. Added a few more pics and simple explanation of just making Kon Lo (dry noodles) kosong (with just mince pork, sauces and flavoured oils) </p>



<p>TIP &#8211; Fried mince pork can be kept outside (room temperature in a clean receptacle in UK) use a clean spoon when taking out for a week or if you have fridge space just put in your fridge. If you store in fridge please micro your prepared bowl before adding noodles to mix.</p>



<p>TIP &#8211; If you have any leftover by the end of the week you can fry rice with them, put on top of steamed toufo, fry mince with potatoes and many more. </p>

Fry the pork mince well until all separated, medium heat. Season with salt &amp; pepper and a dash of dark soy sauce. Takes a little while and care but the taste is so good. </span></div></li><li id="wprm-recipe-1884-step-0-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">I marinated my char sui the night before and just into oven for 30 minutes then used my blow torch to &#x27;beautify&#x27; them. I substitute the rice wine in my char sui recipe with red wine lees which I have some in my fridge to gives it the nice colour red. <p>Yong Liew (Yong Tau Foo)  &#8211; This  famous Hakka-style yong tau foo (also fondly referred to as &#8216;<em>yong liew</em>&#8216; aka stuffed &#8230; fish paste made from securely-guarded traditional Hakka&nbsp;household secret.  it is up to you to create a recipe for yourself that you really really like and then pass on that recipe as your household tradition. </p>



<p>I will give you a guide of my recipe. In my case living in UK I do not have much choices where the fish paste is concerned. I find it better to mix my paste.</p>



<p>I also love to add salted fish but as I have only 2 packets left (from Malaysia) I did not want to use them. Please refer to the pics. If you have any question please feel free to leave me a message. </p>

TIP &#8211; If you are using a chopping board make sure to line your floor with paper and board on top as the fish paste will fly everywhere.<br />
TIP &#8211; You can use a food processor but make sure not to overflow it as they get stuck in the middle inside the blade.<br />
TIP &#8211; Use enough water to reach the consistency and softness you want. Fresh fish may needs more water.<br />
TIP &#8211; Use cold salt water to wet your hands when you are throwing the paste.</span></div></div>

<p><strong>The Paste Mix.</strong> You can just use the fish paste on it&#8217;s own by adding, salt, white pepper, cornstarch and cold tap water. As far as I could remember this was how my grandmother used to do hers. </p>
<p>I have make fish paste mix with salted fish, fish paste with dried shrimps and chicken with prawns. I love all of them. Remember if you use salted fish and dried shrimps it is better to fry them first for that amazing umami taste. Wash and soak dried shrimps and pound them slightly before frying.</p>
<p>Please remember you can add in sesame oil, chicken powder and soy sauce even. Adding mince pork makes for firmer paste. Use the mixture of fish and prawns for bean-curd wraps and bak choy. They are better with softer paste. </p>
