<p>I have been hankering for something Asam quite awhile now. I know today is going to be HOT and it might end up being the hottest day of the year 2024 in UK but I have bought these skate wings on Saturday and they must be eaten by today. I do not want to freeze them. The chap selling did tell me I could freeze them but I prefer them inside my tummy. </p>



<p>So it&#8217;s kinda a, if needs must cook/eat time. I woke up early to water my plants and then started in the kitchen. I wanted to finish cooking before the midday sun. Today I have decided to part with half of my precious frozen torch ginger. No point in saving it for a rainy day. Just eat. <em>kekekekeke</em></p>



<p>I did not have any fresh tomatoes as the ones left in my little kitchen garden are still green So for the different level of sourness, I decided it&#8217;s time to rinse out that bottle of tomato sauce that I have been saving too. I am happy to report that it works! </p>



<p>During the summer in UK when the weather is like now I am usually blessed with an abundance of laksa leaves or Vietnamese mint. I know people freezes them and I do too but when there is a plenty I like to use them fresh. Today I cooked with my own laksa leaves and chillies. Them chillies has a bit of a kick. </p>



<p>I repeat again, my recipe is a guide so please make it your own. I made extras kuah today because hubby said he wants some tomorrow. So tomorrow I will add in a tin of sardines and maybe more red onions and he would be a very happy man. Weird kwai loh that he is! </p>

<p style="font-size:16px">Today is Thursday, the day hubby has to pop into his office. I like to cook him a surprise lunch every Thursday. I sent him to work this morning after giving him eggy bread and started to make my asam curry paste. I planned to finished cooking and showered by the time he comes back for lunch.</p>



<p style="font-size:16px">There are many ways of cooking this dish but this is the way I preferred mine to be cooked as this is the way I have eaten for as long as I could remember. I suppose like most dishes traditionally we are used to how our parents and grandparents cooked them. </p>



<p style="font-size:16px">As for me myself I still much preferred my fish to be seasoned and fried before adding to my asam curry sauce. Hence, I find it hard to eat fish curry outside and I always asked the vendor if they fried their fish first before placing my order. </p>



<p style="font-size:16px">As usual this is more as a guide than a fixed recipe as such. I have a pot of otak udang chilli that I have made the other day which I can add to my paste. If you do not have you can add a small handful of dried shrimps and blend with your paste. I also have daun kesom, laksa leaves, bravely surviving in the cold so I used some to boil my nasi kunyit. </p>



<p style="font-size:16px">As I am using oil to fry and aubergines and fish, I decided to also fry some keropok ikan and prawns from Kuching and some chicken and prawn wantons. This is because after frying my aubergines and fish I will throw away the oil. The oil will then have no more &#8216;strength&#8217; for frying anything else. To try and reuse it some more will cause your cook to be very greasy! </p>



<p style="font-size:16px">p/s Otak udang &#8211; fried prawns heads with oil till crispy with garlic, salt, chilli and blitz in the blender to make a paste. Store in fridge and use at will. </p>

<p style="font-size:17px">On my last trip back to Devon, where I lived for close to a decade originally,  a long time close friend gave me 2 huge lump of beef. A beef rump which I have portioned into steaks, cooked SousVide and a topside which I have been pondering what to cook with it. I have now decided it is going to be beef floss. Then I will surprise my friend by packing some and posting back to my friend so she can try and fill her breads with them as she is a very good baker, training and baking almost daily for the last few years!</p>



<p style="font-size:17px">Serunding daging &#8211; I will cook mine to how I like to taste. When we were young and the parents used to buy these in Malaysia I always tried to search hard for the nice strands and not the fine like &#8216;dust&#8217; floss. They are more crispy and taste much nicer. I like to &#8216;chew&#8217; food. Period. I love soft bones ribs and I will eat it all. I even chew 90% of a skate wing cartilage and enjoy them &#8211; kekekekeke</p>



<p style="font-size:17px">As I am cooking just over 3kg of beef I decided to do this in 2 days.</p>



<p style="font-size:17px">So the day before I cut my beef into smaller chunks and put them to boil in seasoned water till tender. Took me just over 3 hours. I let them cool before shredding them by hand while watching television. Stored them in containers till the next day.</p>



<p style="font-size:17px">The next day I peeled the stuff and blend the paste and started the frying process.</p>



<p style="font-size:17px">I like to boil my beef in seasoned water, not plain. I find this adds to the taste. Of course it is entirely up to you. </p>



<p style="font-size:17px">I also prefer to watch television and hand shred my beef. I do not want to use gadgets or pond them. Again it is entirely up to your choice. As for me I find the stages of cooking therapeutic. </p>



<p style="font-size:17px">TIP &#8211; If you want crispy Serunding daging be sure to add some oil at the end, to fry them a bit. Yummmmmmm&#8230;..crispy bits. Please refer to pics.</p>



<p style="font-size:17px">As in all my recipes please feel free to add or minus any of the ingredients to suits your taste.  Tomorrow I will serve this in an innovative way (I hope) I just told a friend I have this idea knocking about and I am dangerous when I have an idea. I need guinea pigs &#8211; kekekekeke</p>

<p style="font-size:17px">p/s I was just told this minute that this is very expensive to buy. Actually it is not hard to make. They longest time is the frying. However after the sauce have been all absorbed you can transfer to a paella pan to fry dry quicker. (I am just stubborn though I have good? ideas) </p>



<p style="font-size:17px">Insert a moan/complain (kekekeke) &#8211; The hub said it is all his because I do not eat pulled meat. What he said is true. I will never touch pulled meat of any kind that I am not able to SEE the chunk it has been pulled from! However this is different as I not only cooked it but I actually know the famer whose cow this belonged to. </p>



<p style="font-size:17px">Update &#8211; After packing I found 3kg of beef just gave me 2kg plus after cooking.</p>

This depends on the size of your cuts. I cut mine slightly bigger chunks because I want the strands so it took me just under 4 hours for Beef Topside.</span></div></li><li id="wprm-recipe-4733-step-0-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">TIP &#8211; Cut your beef following the grains so you have nice strand. </span></div></li><li id="wprm-recipe-4733-step-0-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">When the beef are cooled enough and ready to be shredded do it while watching television. I hand shredded mine very patiently (some people said I am an impatient person! (till the oils separates) Don&#39;t forget to add your asam keping (tamarind pieces)</span></div></li><li id="wprm-recipe-4733-step-1-3" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Into the paste goes your coconut milk and then bring to boil before you taste and season with sugar (I used jaggery but you can use brown sugar or palm sugar) and salt. It is very important not to forget salt. <p>Beef rendang is one of the most well known of Malaysian dishes. It is as synonymous to Malaysian cuisine as nasi lemak. </p>



<p>We, the Malaysian have adopted and embraced this dish from our neighbour Indonesia and made it our own. </p>



<p>Living in the UK we will never make as nice a beef rendang or nasi lemak as we could in Malaysia. This is because we cannot get nice fresh coconut milk. Some may say that the tin coconut milk is just as good but in my opinion, I beg to differ. However as a Malaysian living in the UK I do not really have a lot of choice. I have a coconut shredder chair (yes the old school one) please refer to pic) but I still cannot buy nice enough coconut to give me any worthwhile coconut milk. </p>



<p>To cook beef rendang it not difficult. The hardest job is frying the kerisik kelapa (shredded coconut strands) Please do not buy the ready fried ones. They taste of stale coconut oil &#8211; yikes. Buy the frozen coconut strands and fry it yourself on a dry non stick clean pan/wok. </p>



<p>I would have used more galangal but I did not have more. I really love the taste of galangal. You can find it normally at any Chinese supermarket. Galangal is not hard to find. </p>



<p>TIP &#8211; In all my curries and cooking I prefer to make my own paste and I always prefers to blitz some of the lemon grass, kaffir lime leaves etc with my paste. This not only gives any dishes more uuumph but thicken the sauce without the need of buah keras (candlenuts) </p>



<p>As for my DIY lemang there is a long story of trial and errors. When I first tried to make it in UK I made tons of mistakes and this is the closest I can get to the real thing now. </p>



<p>Basically it is just mix the drained soaked glutinous rice to a tin of coconut milk, mix in the salt, the pandan leaves, stir and steam for 15 minutes. Remove from heat and remove the pandan leaves. </p>



<p>Then scope some onto your ready banana leaves and more pandan leaves, wrapped and steam again for another 15 minutes. This will cause the banana leaf taste to seep in. </p>



<p>Remove and use a blow torch to torch the banana leaves (you can use gas stove or BBQ) for this to achieve the smoky taste. This give me the closest taste I can get to the real lemang minus the bamboo. When you served your lemang you will see light green on the sides. That&#8217;s the taste and look you want.  </p>



<p>Again as I have stressed before use my recipe as a guide and create your own to your own taste. </p>



<p>I still recall most embarrassingly the first time I tried to make lemang I actually boiled the glutinous rice then roll them into tube using cling film and of course it tasted nothing like lemang! </p>



<p>TIP &#8211; Do not add your gula Malacca till the last hour to limit the chance of sticking. </p>



<p>TIP &#8211; Taste and season with salt if not salty enough or add more sugar if too spicy during the last 30 minutes. </p>



<p>TIP &#8211; Add some fresh cili padi (birdeye chilli) if not spicy enough</p>



<p>TIP &#8211; Cook rendang the day before and let it steep overnight. Then the next day you only need to steam and make the lemang. </p>

<p>In place of shallots I used 4 large red onions as I am out of shallots. The juice from the onions will blend your paste nicely. Do NOT add water. I also added some kaffir leaves to my paste. </p>

I know I am very particular they should be a perfect round. <p>Asam Laksa can happen in Hertfordshire, England. </p>



<p>A couple of decades ago I I was missing Asam Laksa so much but it was near impossible to find all the ingredients here. I was &#8216;importing&#8217; my stash every time I <em>balik kampung</em> <img src="https://s.w.org/images/core/emoji/17.0.2/72x72/1f600.png" alt="😀" class="wp-smiley" style="height: 1em; max-height: 1em;" /> </p>



<p>My stash included torch ginger (<em>bunga kantan</em>), polygonum odoratum (<em>daun kesum</em>) and calamansi lime (<em>limau kesturi</em>) but nowadays they are able to be gotten here but still not easy. </p>



<p>Today I have decided to use some of my stash from Malaysia to cook Asam Laksa as I am going to replenish my stash soon. </p>



<p>For my paste I like to add a small bit of turmeric and galangal (blue ginger) Both these ingredients are easy to find here in Chinatown.</p>



<p>TIP 1 &#8211; To get a clear fish broth sieve it once with a normal sieve then sieve it a second time by placing a sheet of kitchen roll on your sieve as an extra lining for a much clearer fish broth.</p>



<p>TIP 2 &#8211; Blend your spices till fine. I like to blend some of my lemon grass and torch ginger besides adding some to boil with the broth.</p>



<p>TIP 3 &#8211; Remove the big bits from your broth before adding in your fish meat. </p>

<p>Actually Asam Laksa is very easy to cook. Years of working and cooking for a family you learn to organise yourself. </p>



<p>I like to boil and picked my fish the night before and the next day just blend and fry the paste. Mush easier and less stress.</p>



<p>Note &#8211; I have tried ordering asam laksa outside and I have yet to find one I am willing to part my ££ for! A famous restaurant in Chinatown which I once took a Japanese friend to try (after singing the virtue of how cool and different asam laksa is) was a HUGE let down. </p>



<p>When I queried, the waitress told me it just tin sardines + chilli + asam jawa water and the people working there don&#8217;t even eat it! Till this day I am still shocked! </p>



<p>When I read some good reviews recently I think I have to go and try again to see if they have &#8216;updated&#8217; their asam laksa OR maybe I am just fussy? &#8211; kekekekekeke </p>



<p>A good asam laksa (my opinion)</p>



<p>1 &#8211; The broth should not be a murky dark brown or look like curry. It should be a clear fish broth with hint of red chilli oil.</p>



<p>2 &#8211; The mackerels if you have picked yourself should be in chunks not in bits.</p>



<p>3 &#8211; The taste should be sour, spicy, taste of lemongrass, galangal and most important of all the combo of torch ginger and laksa leaves! </p>



<p>Note &#8211; Remember the heh ko/prawn paste is sweet. Use as much or as little as you like. </p>

Do not over boil. Remove the fishes and let them cool down.  If you boiled too long your fish will be too soft and hard to pick. (I am not old enough to eat mushy food, yet!)</span></div></li><li id="wprm-recipe-1414-step-0-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Pick out all the meat and place the bones back to boil for about 30 minutes to an hour to make a flavoursome broth.</span></div></li><li id="wprm-recipe-1414-step-0-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Place the fish meat into containers and in the fridge. You can sieve the stock and store in your fridge (if you like to do this part the night before) I like to leave it overnight.</span></div></li></ul></div><div class="wprm-recipe-instruction-group"><h4 class="wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold">Asam Laksa broth</h4><ul class="wprm-recipe-instructions"><li id="wprm-recipe-1414-step-1-0" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Fry your paste with a touch of oil till fragrant. Then add your fish broth in. Continue to simmer for at least 30 minutes on low heat before adding in the fish meat </span></div></li><li id="wprm-recipe-1414-step-1-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">The secret and special addition of a tin of sardine is added at the last minute! Taste and season. I like mine very sour and I add more asam jawa juice.</span></div></li></ul></div><div class="wprm-recipe-instruction-group"><h4 class="wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold">Garnishing</h4><ul class="wprm-recipe-instructions"><li id="wprm-recipe-1414-step-2-0" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">While your stock is simmering on low heat, slice your pineapple, cucumber, red onions and soak your noodles. </span></div></li><li id="wprm-recipe-1414-step-2-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Serve by placing your noodles, broth and the garnishes on top.</span></div></li><li id="wprm-recipe-1414-step-2-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Lastly add in the heh ko/prawn paste.
