<p style="font-size:16px">I have not been updating my blog for some time. The intention is good but real life got in the way. My KitKat was involved in a hit &amp; run and he as well as us humans were all traumatised. We just managed to get him home now after surgery to wired his broken jaw and he will eventually have to amputate his front left leg but he survived and is getting stronger each day.</p>



<p style="font-size:16px">I have started cooking again, a fortnight of take-aways mostly is not making my tummy happy and I put on weight! Worrying and not sleeping at night gave me more wrinkles and my back ache like nobody&#8217;s business. Hopefully my cat heal faster and things goes back to normal soon.</p>



<p style="font-size:16px">I am typing this post fast because we finally have some time to visit Costco for a big grocery shop and they were selling beautiful whole sides of trout. I decided to buy a piece and used half to cook curry and the other half I cured it &#8211; my way. Hopefully others who like cured fish would and want to try can go and get some now. They were very fresh and so tasty.</p>



<p style="font-size:16px">Basically this curing business is extremely simple. All you have to do is to have on hand salt and sugar plus a clean container preferably one that is air tight. Please follow the pics. </p>



<p style="font-size:16px">So all you need to do is to rinse your trout, dry with kitchen towels and then in a clean air tight container sprinkle a layer of rock salt and sugar. Natural rock salt are less salty. Place in your piece of trout and again sprinkle another layer of salt and sugar on top. Next is the flavours. You can use anything you like really to add extra flavours. Westerners like to use lemon rind, dill etc You can also add a tablespoon of whiskey. Today I crushed come curry leaves, Sarawak peppercorns and dried chilli. Then close your container and forget about it for 6 hours or overnight but no longer than 12 hours. The longer you leave it the tougher the protein but it is entirely up to you. Enjoy.</p>

<p>Besil pesto sauce was first introduced to me by my late father-in-law. Tears welled up my eyes as I type this. It&#8217;s been a year since we lost him but it still hurts. I missed his daily phone call to ask me &#8216;What&#8217;s for lunch, Julie?&#8217; He might not be here but his teaching/recipes lives on. Therefore I also have no time for people who are selfish enough not to share recipe. Utmost annoying are those who lies and boast that they do not measure and those those who tell you to search the internet. Benci! Experiences and TIPs are the yardsticks I measure how kind, helpful and generous a person is. </p>



<p>My father-in-law might not eat all of my food but he loved asking me what&#8217;s I am serving his son. Often he is shocked at the palate his son has cultivated.</p>



<p>Anyway basil pesto sauce is another of them recipe lost in my old blog. As of today it is not lost anymore. This blog is now triple saved. </p>



<p>Basil pesto sauce or any sort of pesto sauce is so easy to make. I promised you that once you have made your own you will never ever eat shop bought one. </p>



<p>Pesto, or to refer to the original dish pesto alla genovese, is a sauce originating in Genoa, the capital city of Liguria, Italy. It traditionally consists of crushed garlic, European pine nuts, coarse salt, basil leaves, and hard cheese such as Parmigiano-Reggiano  and it is with these original ingredients that I was taught to make from. The only different from my father-in-law&#8217;s is I add a lot more garlic and I also use a more generous amount of freshly ground Sarawak&#8217;s pepper. </p>



<p>Of course we can make pesto with any other herbs but for me, my favourite is still basil. It is so versatile a sauce and today I dribble it liberally with Haddock en papillote and both hubby and I enjoyed our lunch very much. As it is so easy to make, I hope with this lock down you will try.  </p>



<p>TIP &#8211; You can &#8216;wash&#8217; your basil by watering them the day before using and let them dry thoroughly.</p>



<p>TIP &#8211; Olive oil must cover the top of your jar if you intend to keep for awhile.</p>



<p>TIP &#8211; Always toast your own pine nuts.</p>



<p>TIP &#8211; Use the hard bits of your parmesan so as no waste. </p>

<p>Crispy curly purple kale. From garden to tummy in 30 minutes all because I wanted some snack and I went over board with planting kale this year. &nbsp;The hubby has been muttering how can we eat that much curly kale but I have been ignoring him. </p>

Cut the kale to the size you want but not too small as they break a bit when baked crispy.</div></li><li id="wprm-recipe-231-step-0-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Arrange them on two trays and drizzle olive oil and salt sparingly gently tossing them. Next sprinkle the sesame seeds all over. Now they are ready for the oven</div></li><li id="wprm-recipe-231-step-0-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Place in a pre heated oven at 170C for 15 minutes. Remove the hot tray carefully and sprinkle the granulated sugar all over. Return to the oven again for 2 to 3 minute.  Leave to cool before serving.</div></li><li id="wprm-recipe-231-step-0-3" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">They can be stored in an airtight container when completely cool.</div></li></ul></div></div>
