<p style="font-size:18px">I have a lot of daun kesum, laksa leaves in my garden still although it is now November and winter is creeping in. I wanted to try and use them up a bit more. I bought a big box of okras (ladies fingers) from Costco and decided to fry them in sambal today and adding daun kesum for the extra fragrance. </p>



<p style="font-size:18px">I also added a lot of onions and udang kering because although my hubby do not eat okras, he loves the spicy onions and sambal udang kering which he will happily eat with just plain rice. Add or deduct whatever you wish. Make the dish yours. I did not have fried toufu but if I do I will add in for him. Just a simple cook.</p>

<p>I have been hankering for something Asam quite awhile now. I know today is going to be HOT and it might end up being the hottest day of the year 2024 in UK but I have bought these skate wings on Saturday and they must be eaten by today. I do not want to freeze them. The chap selling did tell me I could freeze them but I prefer them inside my tummy. </p>



<p>So it&#8217;s kinda a, if needs must cook/eat time. I woke up early to water my plants and then started in the kitchen. I wanted to finish cooking before the midday sun. Today I have decided to part with half of my precious frozen torch ginger. No point in saving it for a rainy day. Just eat. <em>kekekekeke</em></p>



<p>I did not have any fresh tomatoes as the ones left in my little kitchen garden are still green So for the different level of sourness, I decided it&#8217;s time to rinse out that bottle of tomato sauce that I have been saving too. I am happy to report that it works! </p>



<p>During the summer in UK when the weather is like now I am usually blessed with an abundance of laksa leaves or Vietnamese mint. I know people freezes them and I do too but when there is a plenty I like to use them fresh. Today I cooked with my own laksa leaves and chillies. Them chillies has a bit of a kick. </p>



<p>I repeat again, my recipe is a guide so please make it your own. I made extras kuah today because hubby said he wants some tomorrow. So tomorrow I will add in a tin of sardines and maybe more red onions and he would be a very happy man. Weird kwai loh that he is! </p>

<p class="has-text-align-justify" style="font-size:16px">Every year during hubby&#8217;s birthday I will cook a special meal for his departmental colleagues which is usually around 15 to 20 people. That is all I can manage as the entire building will have a couple of hundreds personnel! (pre pandemic) Everyone does the same on their birthdays but mostly the food is shop bought so they all looked forward to my hubby&#8217;s birthday each year. </p>



<p class="has-text-align-justify" style="font-size:16px">I enjoy doing it as I am weird. I actually enjoy the planning and executing more than eating the food itself. I was talking to a friend the other day and she roll her eyes at me. <em>kekekekekeke </em>I enjoy introducing the majority British colleagues with what I like to think a true Malaysian hospitality and cuisines. I also have to plan what I can cook that can travel, easy for hubby to carry in the boot of his car. Luckily his office is just 10 minutes drive away. </p>



<p style="font-size:16px">When the colleagues come back and tell my husband they went to this and that restaurants and order the same food I have made for them but they tasted totally different, not enough ooooomph&#8230;.it makes the hubby proud and make my heart sings lah (honestly)  That is why I like to plan, execute and give them different food each year; introducing them to our Asian, Malaysian cuisines. </p>



<p style="font-size:16px">It had been 2 years now that they missed their treats &#8211; This was in 2017 </p>

<p style="font-size:16px">Tri-coloured nasi pulut with chicken tikka masala, tomato chachumbar, mango raita, cumin potatoes and spicy vegetarian aubergines with mock chicken for the vegetarian. </p>



<p style="font-size:16px">Yesterday was not a birthday or anything but the colleagues have missed hubby&#8217;s birthday twice due to the pandemic so the boss asked hubby if he could &#8216;persuade&#8217; me to cook them something for their first &#8220;meet &amp; greet&#8221;. The only annoying thing is I have 2 days notice!!! Darn it! Hubby forgot to tell me and it cuts down my pleasure of the &#8216;planning &amp; executing&#8217; process joy! </p>



<p style="font-size:16px">However I have to plan something the colleagues have not tried from my kitchen before and must be Covid19 friendly. I decided on individual boxes and must be dry not wet food. So I came up with Mee Siam for main. I have not been able to find a vendor to cater to my taste so far outside so I have to cook. I did not plan to write this recipe out as it all agak-agak and I cooked 3 packets of vermicelli noodles yesterday and the last wok I added some egg noodles. However to my surprise a few persons asked for my recipe so I am scaling down this recipe for 1 wok full or 1 packet of rice vermicelli. I also served crispy wantons for starters and cupcakes for desserts. </p>



<p style="font-size:16px">So please bear in mind to taste and TASTE your sauce before you add in your noodles to suit your taste. Mine is extremely sour and spicy or one of my friend who ate it said &#8216;zingy&#8217; <em>kekekekekekeke </em>I am very liberal with my lime and tamarind juice. Over the past decade the hubby&#8217;s colleagues know that I do not compromise on taste for them. They can have red faces from the spiciness and still they will eat. Very funny. </p>



<p style="font-size:16px">TIP 1 &#8211; Do not boil your vermicelli noodles or over soak them. Just soak in cold tap water. When soft, remove and drain before use. (Ignore what is written in the packet)</p>

<p style="font-size:16px">TIP 2 &#8211; I do not use any soy sauces, dark or otherwise because I do not like the colour too dark and to me it is not necessary.</p>



<p style="font-size:16px">TIP 3 &#8211; Whole grain fermented yellow beans smashed, taste a lot better than the ready mashed ones. Half and half is perfect.</p>



<p style="font-size:16px">TIP 4 &#8211; Place half the eggy strip before the gravy runs dry so they can soak up the taste a bit.</p>



<p style="font-size:16px">TIP 5 &#8211; If serve immediately please gives the vegetables a toss with the hot noodles before serving BUT if you are packing for people aka tapau do not do so. Residue heat will cook the vegetables to crunchy perfection. Overcooked limps beansprouts and vegetables just look so unappetising to me. </p>



<p style="font-size:16px">COMMON SENSE &#8211; </p>



<p style="font-size:16px">1 &#8211; More sauce &#8211; wetter Mee Siam so less sauce drier Mee Siam. It is entirely up to your taste! </p>



<p style="font-size:16px">2 &#8211; Making more of the sambal paste and serving some separately is also nice for those who can eat extra spicy. If you are serving sambal please add a pinch of sugar. </p>

You can do this ahead.</span></div></li></ul></div><div class="wprm-recipe-instruction-group"><h4 class="wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold">Prawns</h4><ul class="wprm-recipe-instructions"><li id="wprm-recipe-4786-step-4-0" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Prawns &#8211; clean the prawns and keep the shells. Fry the cleaned prawns with a touch of oil, minced garlic and seasoned with a pinch of salt and freshly ground pepper. Set aside.</span></div></li><li id="wprm-recipe-4786-step-4-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Prawns &#8211; clean the prawns and keep the shells. Fry the heads and shells with a tbsp of mince garlic and a couple of dried chillies with a tbsp of oil. Seasoned with a pinch or salt. Press with a potato masher to get all the nice bits out (brains)? Heat up your oil and fry your grounded dried shrimps. When fragrance add in your sugar.</span></div></li></ul></div><div class="wprm-recipe-instruction-group"><h4 class="wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold">Seasonings &#8211; Have the seasoning all ready</h4><ul class="wprm-recipe-instructions"><li id="wprm-recipe-4786-step-6-0" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">I prefer my fermented yellow bean half whole and half paste. Buy the whole beans and just chop chop a bit with your cleaver. Very easy.</span></div></li></ul></div><div class="wprm-recipe-instruction-group"><h4 class="wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold">Wok+ing</h4><ul class="wprm-recipe-instructions"><li id="wprm-recipe-4786-step-7-0" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">In a hot wok fry your spice paste until &#39;pecah minyak&#39; where the oils and paste separate. </span></div></li><li id="wprm-recipe-4786-step-7-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Then add in your prawn stock and dried shrimp crisps. Bring to a boil. Next add in your seasonings, bring to boil again and TASTE. The taste must be MORE spicy, sour, salty and slightly sweeter than normal BECAUSE you need to add in your noodles + + + </span></div></li><li id="wprm-recipe-4786-step-7-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">When you are happy with the taste (heightened) add in your noodles and let the sauce absorb. Before the sauce dry add in half the eggs pancakes to suck up some of the sauce. </span></div></li><li id="wprm-recipe-4786-step-7-3" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Turn the heat OFF before you add the rest, half of the vegetables but save half for garnishing when serving. <p style="font-size:17px">I was wondering for days what to do with the balance of the eggs I got from Devon. Last week my son came back from a visit to his Nanny and he brought me a dozen eggs from Okehampton town. He asked the vendor if they are fresh and the vendor took him to look at his chickens &#8211; kekekekeke</p>



<p style="font-size:17px">Actually I was thinking of the Thai&#8217;s son-in-law eggs dish but I wanted to use some of my daun kesum (laksa leaves) before the frost gets to them in the winter. So this dish was born and it tasted not too bad. </p>



<p style="font-size:17px">My daughter is on holiday from work and as soon as she saw me frying the eggs she knew what I was cooking and immediately asked if she should boil more rice!!! </p>



<p style="font-size:17px">She loves this dish. However normally I added curry leaves. Today it is daun kesum. I think I much preferred daun kesom. Unique taste. </p>



<p style="font-size:17px">Well I hope you try this very simple dish. It should be sour enough to make you blink, spicy enough to make you sweat a little and just a slight cane sweetness from the jaggery &#8211; Enjoy</p>



<p style="font-size:17px">p/s boil more rice. </p>



<p>p/s You can use this sauce for fried eggs as well. </p>



<p>p/s Frying the eggs so the wrinkled skin absorb the sauce it very important to the taste. It&#8217;s give an extra layer of texture and taste. </p>

Put some water to boil and sink the eggs in for about 7 minutes (medium eggs) </span></div></li><li id="wprm-recipe-4701-step-0-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Cool the eggs immediately by rinsing them with cold tap water. Then put them in your fridge. This makes it easier to peel the next day. Be careful peeling as you will find for 7 minutes your egg yolks are still slightly soft.</span></div></li></ul></div><div class="wprm-recipe-instruction-group"><h4 class="wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold">The cooking</h4><ul class="wprm-recipe-instructions"><li id="wprm-recipe-4701-step-1-0" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Slice your red onions ready. Put as little or as many as you like. My family loves onions so I usually puts more. I also puts more as I only cooks one dish today. The cooked onions goes very well with rice.</span></div></li><li id="wprm-recipe-4701-step-1-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Slice your garlic and chillies. I used fresh red chillies because I like a colourful dish. </span></div></li><li id="wprm-recipe-4701-step-1-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">First fry your eggs, remove them and then fry your onions and garlic till both are slightly browned.</span></div></li><li id="wprm-recipe-4701-step-1-3" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Then push them aside and add in your jaggery and tamarind paste + juice. </span></div></li><li id="wprm-recipe-4701-step-1-4" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">I prefer my food more sour so I added a tad more vinegar. You can try with a couple of tablespoons and adjust to your taste. </span></div></li><li id="wprm-recipe-4701-step-1-5" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Add in your chillies and half of your laksa leaves. Give everything a quick stir and adjust to your taste. It must be sweet, sour and spicy with the aroma of the daun kesom (laksa leaves) </span></div></li><li id="wprm-recipe-4701-step-1-6" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Lastly add in your eggs to warm up and serve to happy family. Enjoy. My hubby asked for second bowl of rice! </span></div></li></ul></div></div>

<p>Beef rendang is one of the most well known of Malaysian dishes. It is as synonymous to Malaysian cuisine as nasi lemak. </p>



<p>We, the Malaysian have adopted and embraced this dish from our neighbour Indonesia and made it our own. </p>



<p>Living in the UK we will never make as nice a beef rendang or nasi lemak as we could in Malaysia. This is because we cannot get nice fresh coconut milk. Some may say that the tin coconut milk is just as good but in my opinion, I beg to differ. However as a Malaysian living in the UK I do not really have a lot of choice. I have a coconut shredder chair (yes the old school one) please refer to pic) but I still cannot buy nice enough coconut to give me any worthwhile coconut milk. </p>



<p>To cook beef rendang it not difficult. The hardest job is frying the kerisik kelapa (shredded coconut strands) Please do not buy the ready fried ones. They taste of stale coconut oil &#8211; yikes. Buy the frozen coconut strands and fry it yourself on a dry non stick clean pan/wok. </p>



<p>I would have used more galangal but I did not have more. I really love the taste of galangal. You can find it normally at any Chinese supermarket. Galangal is not hard to find. </p>



<p>TIP &#8211; In all my curries and cooking I prefer to make my own paste and I always prefers to blitz some of the lemon grass, kaffir lime leaves etc with my paste. This not only gives any dishes more uuumph but thicken the sauce without the need of buah keras (candlenuts) </p>



<p>As for my DIY lemang there is a long story of trial and errors. When I first tried to make it in UK I made tons of mistakes and this is the closest I can get to the real thing now. </p>



<p>Basically it is just mix the drained soaked glutinous rice to a tin of coconut milk, mix in the salt, the pandan leaves, stir and steam for 15 minutes. Remove from heat and remove the pandan leaves. </p>



<p>Then scope some onto your ready banana leaves and more pandan leaves, wrapped and steam again for another 15 minutes. This will cause the banana leaf taste to seep in. </p>



<p>Remove and use a blow torch to torch the banana leaves (you can use gas stove or BBQ) for this to achieve the smoky taste. This give me the closest taste I can get to the real lemang minus the bamboo. When you served your lemang you will see light green on the sides. That&#8217;s the taste and look you want.  </p>



<p>Again as I have stressed before use my recipe as a guide and create your own to your own taste. </p>



<p>I still recall most embarrassingly the first time I tried to make lemang I actually boiled the glutinous rice then roll them into tube using cling film and of course it tasted nothing like lemang! </p>



<p>TIP &#8211; Do not add your gula Malacca till the last hour to limit the chance of sticking. </p>



<p>TIP &#8211; Taste and season with salt if not salty enough or add more sugar if too spicy during the last 30 minutes. </p>



<p>TIP &#8211; Add some fresh cili padi (birdeye chilli) if not spicy enough</p>



<p>TIP &#8211; Cook rendang the day before and let it steep overnight. Then the next day you only need to steam and make the lemang. </p>

<p>In place of shallots I used 4 large red onions as I am out of shallots. The juice from the onions will blend your paste nicely. Do NOT add water. I also added some kaffir leaves to my paste. </p>

<p>This is a dish I have a craving for few times a year. Cincalok Pork belly. I was so blessed to be the recipient of a beautiful jar of this goodness from a friend. I almost want to put it by my pillow and sleep with it. kekekekeke</p>



<p>Cincalok this jar that I have is from Malacca so the pinkish shrimp used is called udang geragau. Cincalok are readily identifiable and the taste is salty. Therefore when cooking this dish do NOT add salt.</p>



<p>I am sharing what I used in cooking this dish but the proportions is entirely up to you. </p>



<p>Warning &#8211; This dish is very moreish. Boil more rice! </p>



<p>p/s I like mine with lots of onions. How do you like yours? </p>

<p>I have not cooked asam jawa aka tamarind fish for ages. Just last month I was talking with a friend about this dish. </p>



<p>She had bought some amazingly fresh mackerels and I suggested to her this is one of the dish she can cook with her mackerels. This dish must be sour, sweet and spicy. All you need is a big pot of rice. </p>



<p>It is an extremely simple cook and the most difficult thing to do was to clean the kitchen after frying! </p>



<p>Actually I have made a mistake. I should not have bought such a big wild seabass as it was so big my biggest wok 36 cm can&#8217;t fit! Thus frying the fish crispy was not so easy. It&#8217;s just that the seabass was so fresh and winking at me yesterday at the fishmonger. </p>



<p>In the end, however the dish prevails. <img src="https://s.w.org/images/core/emoji/17.0.2/72x72/1f600.png" alt="😀" class="wp-smiley" style="height: 1em; max-height: 1em;" /> </p>



<p>p/s Taste and adjust to your taste. I prefer mine more sour, follow by spicy then sweet. The touch of soy sauce also adds that bit of extra depth of flavour. Season it to your taste.</p>

Mackerels is nice for this dish. Remove and set aside.</span></div></li><li id="wprm-recipe-1613-step-0-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">In a wok, place your oil, fry your garlic, onions and torch ginger, adding the tamarind and water. </span></div></li><li id="wprm-recipe-1613-step-0-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Taste and season with soy sauce, sugar and freshly ground pepper. Lastly add in your fresh chillies and spoon on top of fish just before serving. </span></div></li><li id="wprm-recipe-1613-step-0-3" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Top with fresh coriander and serve with plain rice. </span></div></li></ul></div></div>
