<p style="font-size:18px">I have been asked a few times how do I &#8216;simple&#8217; cured my salmon. It is truly, really, actually quite simple. Since I have quite a few people asking I have decided to blog this. I have been told it is expensive to eat outside. So here is a basic curing recipe. Refine and adjust the ingredients to your taste and make it your own. </p>



<p style="font-size:18px">Now of course the most important ingredient is that your salmon has to be fresh, sushi grade if possible. Do not be tricked by the FRESH Norwegian/Atlantic salmon as logically there is no &#8220;(insert sear word)&#8221; way they could reach Malaysia FRESH. Here in the UK I will only make this if I happened to see very fresh salmon when doing the weekly shopping. If the salmon is not fresh and firm then you will have huge problem slicing it thinly. Pic is a side of salmon fillet just under 2kg. My ratio has always been 1 tbsp alcohol for the container, one for each kg of protein. It can be whiskey, vodka or gin. </p>



<p style="font-size:18px">Today I used 3 tbsp Roku Sakura Gin. Then it is 2 tbsp of brown sugar (1 tbsp per kg of salmon) 2 scant tsp of salt (1 tsp per kg) As for freshly ground pepper I have never measured. Just make sure all the sides are dotted. My family are all freshly ground Sarawak peppers fan anyway. </p>



<p style="font-size:18px">Lastly cometh the herbs. If you are using Gin and vodka you pair with something acidic and light. Here I used lemon thyme. If you have lime use the lime peel, (never the juice unless you eat immediately as the acid, will cook the fish leaving it a horrible opaque colour). As I am vain I like my food to look good too &#8211; Hahahahaha You can also use mint leaves, juniper berries etc. If you are using whiskey which I much prefer really, you can use a stronger herb, even basil as the smokiness of whiskey especially the Lagavulin 16, which is one of my favourite mid range whiskey at the moment, can take it.  I have tried with curry leaves &#8211; not bad. You adjust to your taste after a few tries. </p>



<p style="font-size:18px">Roku Sakura Gin + lemon thyme + salt + freshly ground pepper + brown sugar</p>

<p>Note &#8211; It is but common sense that if you are not going to eat it for a few days you would lessens the sugar, salt etc. Same as if you cannot take alcohol without the urge to sing then please adjust accordingly. My basic recipe is a guide. Try curing yourself as it is extremely easy. Nowadays I prefer to eat them cured to sashimi style. I feels &#8216;safer&#8217; &#8211; kekekeke Must be the age thing. </p>

<p style="font-size:18px">The weather in UK has suddenly dropped to a low single digit this morning. My area was just 3*C So I decided to turn the oven on. Kinda a frugal wife style of two birds one stone. </p>



<p style="font-size:18px">As I was mixing up the ingredients, dry and wet it suddenly dawned on me that it is not that much different from making cekodok pisang! Being of a curious nature; I do know curiosity kills the cat, I spent a happy afternoon researching. I found some interesting read on who invented the muffin &#8212;-&gt; <a href="https://www.tffn.net/who-invented-muffins/">here </a> As for who and when was the first recorded jemput-jemput pisang or cekodok pisang, no one knows. </p>



<p style="font-size:18px">Normally when I make muffins I have only 1 rule. Separate the dry and wet ingredients! Then mix lightly with gentle touch and do not overmix them. Your muffins will turn out all right then. Needless to say if you are hankering for a cakey bite, muffins are the easiest to make. The batter will be slightly thicker than cekodok pisang. </p>



<p style="font-size:18px">If you do want to make a simple cekodok pisang there is a not too shabby recipe <a href="https://www.julieolive.co.uk/2020/04/02/cekodok-pisang-banana-fritters/">here</a> </p>



<p style="font-size:18px">In this bake my <strong>Dry ingredients</strong> are 2 cups of cake flour, 1 tsp baking soda, 1 tsp baking powder, 1 tsp cinnamon powder and generous pinch of salt. </p>



<p style="font-size:18px">My <strong>Wet ingredients</strong> are 3 &#8211; 4 large bananas meshed, 100g of melted butter, 100g of muscovado sugar, 1 tsp vanilla essence, 1 tsp vanilla bean, 1 large egg and 2 &#8211; 3 tbsp of milk. </p>



<p style="font-size:18px"><strong>Optional ingredients</strong> are of course, chocolate chips, dried fruits nuts but today I just top with a cross section slice of banana for non other reason than aesthetic only and maybe also because I like the taste. </p>



<p style="font-size:18px">TIP &#8211; Do not worry about how fine to mash you banana because it is rather nice to have a bite and finds some bits of banananananananana </p>



<p style="font-size:18px">Update &#8211; 17th October &#8211; I forgot to say bake in a 180C oven for 30 minutes. Do the skewer test please. </p>

<p>When my son was young I used to make lunch boxes for him daily as he doesn&#8217;t like the food from his school canteen. I actually wanted him to try more different kinds of food so I joined him to the school meals list. It only  lasted a couple of weeks!</p>



<p>However the school actually has a menu of what is being served daily. Once a week we were given a menu and the boy and I have to tick what he wanted for 5 days (weekly). Typical English food like fish fingers, spaghetti Bolognese and such. As my son was not too keen on a lot of the food offered and also he wanted to gobble up his lunch quickly just so he could play footie, he much preferred to have lunch boxes. </p>



<p>There was a year when I forced him to join the school Christmas lunch with all the other students before the school Christmas pantomime. When I went to the school to collect him that day one of the canteen lady told me, &#8220;Mrs Olive your son said our gravy is like brown drain water&#8221; I was so embarrassed, extremely embarrassed that I did not know where to put my face or how to begin to apologize! We still reminiscent about it to this day with a chuckle. I think he was 8 or 9 years old then.</p>



<p>Anyway one of his favourite lunch box food is my savoury muffins and of course his favourite is none other than cheese and bacon muffins. Sometimes I add in a bit of sweet corn or grated carrots. You do the basic mix and add anything you like within reason. If course common sense is not to overload with vegetables. Let children enjoy a bit. </p>



<p>Use this basic ingredients and adjust add or minus stuff to suits your taste. </p>



<p>The only one golden rule is mix the wet ingredient to the dry and do not over mix the mixture!</p>



<p>Remember when you scope onto your tin, make sure it&#8217;s like a mound in the middle and not flat. This si so that your muffins baked like a round ball, prettier. </p>



<p>I would have added chives to today&#8217;s bake but I have non at home so I decided to add some larger pieces of bacon on top. </p>

<p>Firstly lets deal with the bacon &#8211; Place on pan, covered with another pan and into hot oven to crisps up. I used tin foil because no washing up. You can also fry them but that will mean more washing up! hahahahahahaha</p>

<p>I have never hidden the fact that I prefer my cake naked. If it has to have a filling then I prefer it with fresh cream. I do not like a lot of icing, fondant, marzipan etc etc. However I like a bit of butter with dry cakes, ok a lot of butter with dry cakes such as tea cakes, which will be my next cake recipe. I love the tea cakes my mother in law makes for me every time I see her. I am also partial to a bit of  crème anglaise with my cakes. </p>



<p>Besides very rich butter cake I have a love for Marble cakes. I can&#8217;t even remember where I got the original butter cake recipe from but I love old school and old world recipes. I have accumulated through three decades a large amounts of cookery books and some very old ones too. Over the years I have tweaked the butter cake recipe to just how I like it.  </p>



<p>The other day I was enjoying my butter cake and thinking it&#8217;s time I tweak it into a marble cake but I do not want to lose any of the buttery goodness. I went and bought a fridge drawer full of butter intending to start experimenting and using my the family work colleagues, neighbours and friends as guinea pigs but to my surprise I like this cake on first try! </p>



<p>So I better write down my recipe pronto else I forget. I have also promised some people to write this out. </p>



<p>I fell the most important thing to remember is not to use different setting when beating egg whites. This is to ensure that all the air bubbles with be same size, stable. </p>



<p>Second most important thing is to make sure your baking powder is in date. Nowadays I prefer to buy those sachet ones but for heavy cakes like this it is better if you have double action baking powder.</p>



<p>Thirdly you need to bake your cake according to your oven&#8217;s idiosyncrasy. Get to know your oven.  Each oven works with a slight different and mine is a fan assisted oven. I also live in the UK and inside my home temperature is never above 23*C in winter.</p>



<p>Lastly for a marble cake to look good the brown part should be less than the plain batter. Only then will it look good. (My opinion)</p>

Turn the pan upside down at the sink and knock off any excess flour. (I prefer this method) Or use a good non stick paper and stick with some butter on to the pan.</span></div></li></ul></div><div class="wprm-recipe-instruction-group"><h4 class="wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold">Egg White Mixture</h4><ul class="wprm-recipe-instructions"><li id="wprm-recipe-2429-step-1-0" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Whip the egg whites on medium-high speed until foamy and sprinkle in the baking powder. I also like to use a generous pinch of Cream of tartar. </span></div></li><li id="wprm-recipe-2429-step-1-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Continue mixing to a stiff soft peak adding in the sugar slowly. </span></div></li></ul></div><div class="wprm-recipe-instruction-group"><h4 class="wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold">Egg Yolks Mixture</h4><ul class="wprm-recipe-instructions"><li id="wprm-recipe-2429-step-2-0" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Whisk the yolks well with your brandy and vanilla essence. </span></div></li></ul></div><div class="wprm-recipe-instruction-group"><h4 class="wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold">Butter Batter</h4><ul class="wprm-recipe-instructions"><li id="wprm-recipe-2429-step-3-0" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Place butter and condensed milk in the bowl. Beat on medium speed until light and fluffy. </span></div></li><li id="wprm-recipe-2429-step-3-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Add half the <strong>Egg Mixture</strong> to the <strong>Butter Batter. </strong>Whipped till well mixed. Gently fold in the <strong>Flour Mixture</strong> and fold lightly together with the rest of the <strong>Egg Mixture</strong>. </span></div></li><li id="wprm-recipe-2429-step-3-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Divide the batter into 2 portions. Set <strong>ONE</strong> portion aside and to the other portion add the coffee powder, chocolate powder and camp essence. </span></div></li><li id="wprm-recipe-2429-step-3-3" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Alternately scope both the batters into your prepared pan and gently smooth the top. Then bang your pan twice before putting it to bake.</span></div></li><li id="wprm-recipe-2429-step-3-4" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Reduce the heat of your oven from 200C to 170C and bake for 10 minutes. Then reduce oven temperature to 130C for a further 70 minutes or until cake is cook. (My oven is fan assisted)</span></div></li><li id="wprm-recipe-2429-step-3-5" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">When cake is done, remove the pan from the oven and place on a cooling rack. Let the cake cool in the pan for about 20 or so minutes, then turn out onto a cooling rack to cool completely. This can take about an hour! </span></div></li></ul></div></div>

<p>When we were growing up, my sibling and I, the five of us enjoys my mother&#8217;s butter cakes and often we have to fight over the last few pieces. Now I can laugh about it but I remember then there were even tears! This is my 3 parts Rich Brandy Butter Cake.</p>



<p>I also recollect that my mother used both brandy and vanilla essence. My mother had forgotten which recipe she used. However I have over the years tweak this recipe a bit by bit and I am now satisfied with the taste. I used a good vanilla paste so I can use 50ml of brandy. </p>



<p>I am sure if I wait 24 hours before eating it, the brandy taste will matures a bit and  I was going to wait for 24 hours before slicing but hubby came home from work and was giving me his best &#8216;I am hungry&#8217; look. </p>



<p>Now half the cake is gone so I will bake another tomorrow to keep for 24 hours! </p>



<p>I actually love to eat cakes naked. I do not like icing, fondant and such. A good old school butter icing made with butter, icing sugar and ice cubes like how my mother used to make by hand is not too bad. since living in UK I am partial to fresh cream and crème anglaise on cakes. My repertoire of cakes is just about a dozen. I guess I am extremely fussy. </p>



<p>I bought a baking tin with a bit of groves at the sides the last time I was in Milan. It was made in Italy. Collecting baking tins and cookbooks is my &#8216;must do&#8217; when I travel.</p>



<p>The best butter cake to me must be extremely buttery, extremely dense, sweet without being too sickly sweet but RICH. Above all else it must be perfumed with butter. Perfect with a cup of black freshly ground coffee or plain tea. This is such a recipe. </p>



<p>Note &#8211; Please use the best butter you can afford. It makes ALL the difference in my honest opinion. If you use a salted butter then omit the generous pinch of salt. If you are using unsalted butter then use at least a tsp of salt. </p>

Beat on medium speed until light and fluffy. Add in the vanilla essence and or brandy.</span></div></li><li id="wprm-recipe-2322-step-2-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Add half the <strong>Egg Mixture</strong> to the <strong>Butter Batter. </strong>Whipped till well mixed. Gently fold in the <strong>Flour Mixture</strong> and fold lightly together with the rest of the <strong>Egg Mixture</strong>.</span></div></li><li id="wprm-recipe-2322-step-2-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Reduce the heat of your oven from 200C to 170C and bake for 10 minutes. Then reduce oven temperature to 130C for a further 70 minutes or until cake is cook. (My oven is fan assisted) </span></div></li><li id="wprm-recipe-2322-step-2-3" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">When cake is done, remove the pan from the oven and place on a cooling rack. Let the cake cool in the pan for about 20 or so minutes, then turn out onto a cooling rack to cool completely. This can take about an hour!</span></div></li></ul></div></div>

Bring to boil and add in the cream and Dijon mustard seeds.</div></li><li id="wprm-recipe-225-step-0-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Thicken with roux. Season well. Turn off the heat and then add in lemon juice and grated cheese. Wait till cool down then assemble your pie.</div></li><li id="wprm-recipe-225-step-0-3" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Fill your pie dishes. Roll out and cut your pastry to cover the top of your pie dishes.</div></li></ul></div></div>

I much prefer this way then to seal the sides and cut holes in the middle for letting the steam out. The pies looks prettier this way. p/s A roux is typically made from equal parts of flour and fat by weight. This is normally added to thicken sauces.</span></div></div>
